Almonds are not nuts. They are the kernels of stone fruit. They belong to the rose family.
Almonds are healthy in many ways. Not only the considerable vitamin E content but also the amount of unsaturated fatty acids make them a must-have in a balanced diet. They are also very popular in the confectionery and snack industry.
For us, almonds are our main raw material. We use them to make marzipan, but also other products such as almond slivers, slices, chopped flour or pulp in a wide variety of processing forms. The decisive factor is always our customers’ area of application.
While almonds are grown in many parts of the world, over 75 % of the world’s almond production comes from the USA in the state of California. Other major almond growing regions are Spain, Italy, Australia and the Mediterranean. Almond trees require a Mediterranean climate with mild, wet winters and hot, dry summers. They also need a cool dormant period in winter in order to flower properly in spring.

Almonds are all about “small but mighty”, because there is a lot of goodness in the kernels. For example, they are not stingy with healthy fats, vegetable protein and fiber. Trace elements, minerals and vitamins can also be found in the supposed nuts. Magnesium, calcium and iron as well as vitamin E and B vitamins stand out in particular. They also have a high energy density.
